Once you acquire your Bow and Crossbow in the main story, you will also come across the different types of ammo available in the game. You can get arrows from NPCs or craft them yourself. If you wish to change the arrow type, you will need to assign it to your weapon of choice beforehand. Once you can see the weapon you will need on the hot bar, you can now assign your arrow type. You can check the center of the wheel to find what type of ammo is currently assigned to which weapon, and you just need to cycle through it to find the one you want to use.
