Sinistea comes in two forms, either an authentic form or a false form. It is hard to decipher it unless you look around it for a seal, the seal on a Sinistea will prove its authenticity. But real Sinisteas are quite rare, so mostly you would have caught a phony one. Whichever you have, you have to use either the Cracked Pot or the Chipped Pot to evolve it. The Cracked Pot is used on the phony Sinistea, while the Chipped Pot can be used on the authentic Sinistea to evolve it.

To get the above items, you have to visit the Auction House at Porto Marinada. This is mostly a late/post-game item since you have to complete the majority of the story and quests to get the Chipped or Cracked Pot. If you still cannot find the Pots in the Auction House, then you would have to complete the entire storyline and quests to find them. Head back to the Auction House whenever you can to purchase it and use it on your Sinistea. After that, you will get Ghost-type Polteageist.
