Before you can assign jobs, you should check whether you have all storage options unlocked. This includes food storage, wood storage, water storage, and any other resource storage you have. Your villagers will need a place to store their wares, so building storages first will help you out. Next, head over to your Dynasty menu and select the Jobs tab. There will be a list of jobs here that your villagers can do. Pick the job that you wish to get completed, then assign a villager for it. You will also get a list of resources the villagers will need to complete the task. Once you have the resources, storage, and the job assigned, the villager will work for an indefinite amount of time till your resources run out.

You can also assign villagers to complete special construction projects if you have them unlocked. The more quests you complete and the more buildings you unlock, the more jobs you can assign.
