Endermen can be passive creatures, until you do something to annoy them. Once they are upset, they can unleash their powers of teleportation and and attack you, so you will need to watch out for them.
As long as you don’t make eye contact with them with your character, you should be fine. There are a couple of tactics you can use to do this.
Don’t hit the Enderman
If you come across an Enderman, you should take care not to attack it, either accidentally or on purpose. Unless you want to begin the fight, that is.

Travel during rain
As Endermen are known for their dislike of water, you can try traveling when it is raining. They are aquaphobic as they take a lot of damage from water, so you will be at an advantage.
Use an Endermite
Break Ender Pearls to get Endermite, and the Enderman will attack it instead, thus leaving you alone. This is a good tactic if you need to make a quick escape or are surrounded by Endermen.
