It is recommended that you attempt to capture the Jaguar only after you have reached Awareness Level 25 and are at the Bronze tier. It will also help to unlock the Habit Analysis skill unlocked on your mask. After that, make your way to the northwestern section of the beginning area of your map. They are spotted all across the region, so use your Habit Analysis skill to track them. They will leave behind footprints that you can follow and find their resting point.

You need to find the Jaguar with the title Female Panther. The Female Panther usually spawns after you have searched and activated enough Jaguar Footprints. So pay attention to the ground and keep using your Habit Analysis skill. But be careful, as using this skill might attract low level Jaguars to attack you. Defeat them to get them out of the way. Now that you know where the Female Panther is, you need to do the following steps

Craft several medium traps and also bring items to help repair it
To repair a trap, you require Planks, Hardwood, Thatch, and Thick Rope
Since you will be building a trap outside your base, it can quickly deteriorate. Repair it frequently till you are able to capture a Jaguar Cub
You will also require several meat and fish or any kind to use as bait
After locating the Female Panther, take a look at the status above its head.
There are three statuses for the Panther, from Hunting to Returning Home and Resting
Once the Female Panther is making a move home, follow her to her lair
She will return to her cub, and you will spot another smaller panther of the same level as the mother
Once they are at the Resting stage, place several traps around their lair and fill them with meat
Eventually the cub will wander in and you can capture it
Dismantle the cage and grab the cub, then make your way back to your base
Place it near an appropriate feeder to make it grow, then craft the right saddle to use on it
You now have a Jaguar Mount
