To remove an item off the shelf, you first need to get an empty box. You can get empty boxes after you have stacked up items on the shelves. Pick up any empty box and take it to the shelf that you need to clear. Now, hover over the items you wish to clear out with your mouse and right click on the item. This will start stacking items back into the box and you can then take them away to storage.
To restock items, you can go back to your preferred shelf while carrying the box of items in your hands. This time you have to left-click on the item to add them to the shelf. This is the only way to remove and restock items on shelves. There could be many reasons why you would want to pull out an item from the shelves.
