To gather moss, you should have access to the surface levels and are able to reach the City of Ephyra. But without the Unraveling a Fateful Bond incantation, you cannot survive up there. The ingredients to craft this incantation requires moss, so you have to find a way to last as long as possible to grab it. Luckily you can find them growing in the starting area where you spawn on the surface.
To gather moss under these difficult circumstances, you can grab them quickly and die. Once you respawn, repeat the process till you have two moss. Besides this, you also require 2x Lotus, 2x Nightshades, and 2x Thalamus along with the 2x moss to craft the Unraveling a Fateful Bond incantation. With this, you can survive the surface and work your way through the new biomes and new bosses without dying
