Currently, it is not yet known if all Pokémon in Pokémon Scarlet and Violet will come equipped with the Run feature, but there is a possibility that certain Pokémon will. With that said, you can only escape or run away during wild encounters, and not when you are paired with a Trainer or in a Gym Battle. In earlier games, there was even a speed element involved, where you cannot outrun a wild Pokémon with a higher speed stat. So you have to ensure that you are battling Pokémon with lower speeds to run away successfully.
Usually, you can find the Run option when you enter the battle menu. Clicking on it will make you run away from battle and not engage with the wild Pokémon further. You can also use Pokémon that have higher speed stat to run away quickly, or use items like Poke Doll or Smoke Bomb to distract them. But if your Pokémon is under a Binding move, then you have to wait till the effect wears off before you can run.
