Usually, the rule of thumb for regular enemies like Goblins and Saurians have a respawn time of two days. Since they are the most common monster types you will encounter everywhere, you can just wait for 2 days and they will respawn at the same spot where you first met them. As for boss monsters like Chimeras, Drakes, and Medusas, it will generally take a week or 7 days for a respawn. Even then, it is not always guaranteed that these boss monsters will appear at the 7 day mark. In case they don’t appear, you can wait for a few additional days and then check their spawn point to find them. You can wait at your house or inn or even find a bench to pass the time
If you still can’t find the beast, then they may have relocated. Luckily, they won’t venture too far, so you can just walk around to find them. Beasts like the Griffin and Drake are always on the move, so you have to explore the area thoroughly to find them. If that doesn’t work either, try to restart your game and try again
