Usually the ratio for converting silver to gold is 5:1, but it can change in later updates. Besides getting gold coins, you can also turn silver coins into silver powder and silver ingots. 

You can then take silver powder and silver ingots to the weaponsmith to craft silver weapons. You have to complete the weaponsmith’s questline first before they will start crafting new weapons for you.
