The most common way to get hide is by killing animals. You will encounter deer and other creatures while exploring the Elven Quarters. This area is accessible very early in the game, so you don’t have to go too far to find it. Once you get here, take a few swipes with your favorite weapon and kill a bunch of animals here. You will usually get 1 or 2 hide per animal. 

The second method of getting hide by crafting it, but this process only happens way later into the game. You need to unlock a loom, which can be found past the Crystal Descent area.
