In order to make the choice, players should know what will happen if they choose one or the other. The choice is simple: 

1. Keep the Githyanki Egg 
2. Give the Githyanki Egg to Esther

If players choose the first option and decided to Keep the Githyanki Egg, they will make her very angry and tell them everything she thinks about them. This will lead to a fight (a tough one) as Esther has the ability to turn invisible. To counter the invisibility, players can have Volo as a party member and use his Ersatz Eye (obtained after rescuing Volo in the Blighted). 

If players choose the second option and decided to not give her the Githyanki egg, she’ll accept the egg and give them 258 gold. But after some time, players will find Esther again but this time they will see other NPCs dead on the floor of a Baldur’s Gatehouse. The bodies will surround the hatched egg and players would regret giving her the egg. Due to this choice, players won’t be able to get one of the best teammates, Lae’zel, a fellow Githyanki.

So it is recommended to not give her the Egg and fight Esther. After getting defeated, players will get good loot as well.
