The only way you can farm wool in Hades 2 is by defeating Polyphemus. This boss can be found on the surface, within the city of Ephyra. You have to venture to the center of the city before you will bump into this cyclops boss. Once you reach the center, you have to find a door behind the fountain guarded by six Pylons. There are 9 doors in total around the area, and you need to enter 6 of them and destroy the spirit prisons within. Once you do that, the exit will be freed up, giving you access to the boss

Since Polyphemus is the first boss you will meet while exploring the surface, it is hard to miss him. To beat him, keep your distance and use ranged attacks. He has a bunch of AoE attacks that will deal a lot of damage. He will also capture sheep that are around the arena and eat them to heal. Kill the sheeps before they reach him to keep his health low. Eventually you can defeat him and gather wool from him
