If you are confused about how to know whether the Ore Deposits have respawned or not, there is a convenient way to do it. First, you have to unlock Sensor+. Complete Robbie’s Sidequest to unlock the Sensor+ and return to an area where you have previously found rare Ore Deposits. Sensor+ has a wide range to scan, and players can scan almost everything using this device, including Ore Deposits. Place them near where the Ore Deposit was previously, and check whether it gives the signal. If the device starts, your Ore Deposits have spawned again. Otherwise, you have to wait for some more time.
