Gholdengo evolved from Gimmighoul after meeting a certain requirement. Gimmighouls themselves are hard to spot, and there are only certain places where they will spawn. There are two types of Gimmighouls, the chest form, and the roaming form.
You need to capture the chest of Gimmighouls to get Gholdengo. To find chest Gimmighouls, you need to visit all the watchtowers and climb to the top of them. If you spot a ladder on the watchtower, then these are the places where Gimmighouls will be. They can also be found hidden behind ruins, so you should visit any runic or run down structures to find them.
Once you manage to capture one, you need to collect 999 Gimmighoul coins before you can evolve it into Gholdengo. There are a few ways you can collect Gimmighoul Coins, and the most basic way is to find other chest Gimmighouls and defeat them. Each time you do, you get a certain amount of Gimmighoul coins. Gimmighoul chests do respawn, so you can try this method over and over again.
Another way is to find Roaming Gimmighouls and click on them. You cannot capture or battle them, but clicking on them will give you some coins. You will know they are around when you turn your volume up while roaming the overworld and hear the noise of coins.
And last, you can find an NPC in Medali West who is willing to donate 20 coins. You can find him close to the amphitheater near the Pokémon Center. You can also run into some coins while scavenging in the overworld, but those are quite rare. Once you collect them all, give them to Gimmighoul and increase its XP to one more level to evolve it into Gholdengo.
