You can spot the Treasure Hunter when you first head over to Bitter Lake > North Shore of the Bitter Lake in Chapter 3. In case you don’t find him here, you can skip ahead to Valley of Ecstasy > Forest of Felicity in Chapter 3. Once you find the Treasure Hunter here, you need to cast the Ring of Fire spell to keep him warm. After that, he will tell you to head over to Melon Field in the Valley of Ecstasy. From the Forest of Felicity shrine, turn right before the archway and walk down the snowy path. Keep heading down the path till you find some stairs on your left
Head down the stairs and continue to go straight. You will reach a lake and a wooden bridge. Get into the lake and follow it to the left side towards the large stone pillar. On your right you will find a path lit up by torches, head over there and jump down and go across the large tree bark. Continue downwards towards the torches below and you will find Melon Field shrine. Just near the shrine is a large statue, where you will spot the Green Capped Martialist boss.
