The only way you can cheese a double Roseshroom is by using an Echo that deals high damage. Echoes like Geohide Saurian, Hoochief, or the Cyan-Feathered Heron are great 3-cost echoes that deal tons of damage. Plus you can get them quite early in the game. Once you meet the double Roseshroom, try to hide behind the giant leafy plant near their spawn location. This way, you can close enough to see and attack them but they cannot attack you back

Next, use your chosen Echo and fight the one closest to you. The other Roseshroom won’t fight unless you get close to them, so you can fight them one by one. Defeat the first Roseshroom then go after the second. Once they are dead you can claim their Echo. If you don’t have a reliable Echo, you can always hide behind an object and shoot at them with a character that uses ranged weapons. Just time your dodges and hit away.
