The only way you can unlock shiny and sparkling monsters is through synthesis. You have to get two of the parent monsters and fuse them to get a new monster. You have to repeat this step several times, since the chances of getting a normal monster is more than a shiny monster. So repeat the steps and keep synthesizing till you get a shiny monster.
The quickest and best way to do this without wasting monsters is by performing a manual save. Save manually before synthesizing and then start the process. If you happen to get a normal monster, then you can go back to your previous save file, reload, and repeat the process. Eventually you might unlock a shiny monster after several trials and errors. You will know you have a shiny if you see a small purple mark on the left bottom corner of their monster avatar. You should also keep in mind that if you are looking to synthesize shiny monsters to pass on their special traits, that is not possible. The monster with the special trait will be the only one to own it.
