Like most fish species, you can find Mudcrawler Fish in the various water bodies around Pandora. There are a few places where you might run into them in abundance, and that is if you go exploring around Kinglor Forest. Over here, you can explore Tangled Lake under the Woodsprite Arches, or head west from there towards Wisdom Lake. You can find these areas in the Swamp Lowlands Biome in Stoneblade Ridge.
