Once you have parry as your skill, press R1 right after your L1 block. This will make Kratos hit the enemy with a shield strike. You can upgrade this skill when you strengthen your axe.
To parry, it all depends on timing. You need to press the button consecutively to execute the perfect action. Press the R1 button just as the enemy is going to hit you, right when you see a color-coded attack. The colors of the attack can mean various things. Red circles are what you need to avoid at all costs since it is so powerful it will knock you out. These attacks cannot be blocked either, so your best bet is to dodge them. Yellow ones are not as strong, and you can block or parry them. Leaving yourself exposed during a yellow circle attack will stun you, but if you parry them during the window given then you can stun them instead. Attacks without any color are normal attacks and can be blocked and parried without any repercussions.
