1. First of all, press Alt + F4 on your keyboard and wait for a few seconds until you’ll get the option to quit. As soon as it appears, press Escape and get into GTA V again. Wait for sometimes and the game will be saved automatically.
This way, you are not going to leave the game completely, but the game will consider that you have closed out to the point and that needs to save.

2. Another solution is to just change an accessory by using the Interaction Menu, then exit from it and wait for a few seconds. This process will force a save. However, the same error will be back after sometimes and you will need to do the same process again.
