You are expected to burn the Erdtree to progress through the main storyline. You can also choose not to, but the option is still unavoidable. If you want to gain access to the area beyond the Erdtree from the Elden Ring Site of Grace, then that’s your only option. But doing that will mark most of your other quests inaccessible since either the NPCs who hand them out will be dead or missing. You can delay the burning towards the end of the game after completing all the quests and side quests.
There are various consequences for burning the Erdtree, such as turning Leyndell into the Ashen Capital, some of the NPCs at the Roundtable Hold being dead, and some locations will be locked. You will also have to fight Godfrey the First Elden Lord and Sir Gideon the All-Knowing to gain access to what is beyond the Erdtree, so it is best to leave that for the last.
There is a way to reverse the burning of the Erdtree, and that is to attain the Age of Order ending.
That’s all there is to know about should the Erdtree be burnt or not in Elden Ring. If you liked this guide you can check out our other guides as well.
